molten chocolate cookies

If you like molten chocolate cake, you will love these cookies. I got this recipe off a Guittard semisweet chocolate chip cookie bag and it's a keeper!
2 cups semisweet chocolate chips
3 tablespoons butter
2 large eggs
1/2 cup sugar
1/2 teaspoon salt
1 teaspoon vanilla
1 cup flour
1/2 teaspoon baking powder
1. Melt chocolate chips and butter over low heat, stirring until smooth but thick. Remove from heat; set aside to cool.
2. In large bowl beat eggs, sugar, salt, and vanilla on high speed about 2-3 minutes until pale yellow and slightly thickened. Mix in chocolate on low speed. Stop and scrape bowl. Add flour and baking powder on low speed just until incorporated, stopping once to scrape bowl. Refrigerate dough for 15-30 minutes.
3. Scoop 8 2-inch mounds onto parchment lined cookie sheet. Bake one sheet at a time at 375 degrees for 12 minutes or until crusty on top but soft in the middle.
4. Best when served warm; reheat for 10 seconds in microwave.
These are great served with vanilla ice cream!
